I’m excited to share today’s recipe with you guys. The Holidays are upon us, and if you’re looking to add a little Latin flavor and some spice to your side dish, look no further. Frijoles con Chorizo is a one of my favorite side dishes. It packs a lot of flavor into a quick and easy dish. I’m going to show you how to make it today using La Morena® Beans.
You can find at least one can of beans in my house constantly, normally more, and La Morena® Beans are a staple. Not only are they made with only quality ingredients, but they’re such an affordable price! You know that I love a good deal. (And delicious food).

Is there really a better deal than free?
Growing up in a multi-cultural household, my Holidays look somewhat different from everyone else’s. Instead of your typical turkey and ham dinner, we feast on tamales, tri-tip, beans and rice, etc. I remember my grandma would always make a giant pot of tamales for all of us. She would even stick quarters in them so that we had “a little something”.
I like to think that I inherited my love of cooking (and use of too much salt) from her. Making delicious meals for my family while enjoying quality time and conversation will always be something that I crave. Now that I’m a mother, I hope that I can carry on these traditions and do them justice.Here I am, looking all but pleased, during our yearly reenactment of the birth of Jesus. We did this as a family every year. Afterwards, we all sang “Away in a Manger”.
What traditions did your family have growing up? Do you still follow them today? Were any of them “not the norm”, so to speak?
Onto the recipe—
Frijoles con Chorizo
1 splash of oil (Coconut, Olive, Canola)
2 can of La Morena® Beans
1 package of either beef or pork chorizo
1 cup diced onion (optional)
1 handful of queso fresco, for garnish
Preheat a large skillet on medium-high heat.
Heat a splash (probably a tablespoon or so) of oil in the pan and saute onions until softened.Add chorizo and chop into small pieces with a wooden spoon until cooked through, not necessarily browned.(If you want to make this dish somewhat healthier…stop here and drain excess fat from the chorizo before proceeding. If not, it adds amazing flavor to the beans, and you can continue without draining).
Empty the entire contents of your can of La Morena® Beans and mash together to incorporate the beans into the cooked chorizo. Turn stove down to low to allow your beans to heat properly.
Top with crumbled queso fresco and serve warm.
I love pairing them with homemade tamales, especially this time of year.
It is tamale season, after all.
